位于首都北京核心位置、开业至今屡获殊荣的北京王府井文华东方酒店,近日任命周雁平为其行政总厨,全面负责酒店所有餐厅,包括紫膳、文华扒房+酒吧和MO Bar的出品及质量管理。
游历世界资历丰富的周雁平曾服务于世界多地的奢华酒店及餐厅,为文华东方酒店集团服务长达近15年之久,曾先后为香港文华东方酒店与东京文华东方酒店效力。在加入北京王府井文华东方酒店前,周雁平于东京文华东方酒店担任行政副总厨一职,不断突破创新,屡创佳绩。由他掌管的Tapas Molecular Bar,自2014年起连续七年被评为东京米其林一星餐厅。凭借着对烹饪的热情与不断钻研,他一直致力于用超越常规的方式为客人提供全新的用餐体验,带来非凡惊喜。
周雁平出生于中国香港,曾于瑞士工作,在此期间游历欧洲各国进行厨艺学习,西餐烹调的多元化为他留下深刻的印象。2005年加入香港文华东方酒店后,酒店创新多元的餐饮环境和烹饪方法极大地扩展了他的理念和专业实践,影响他最终形成了自己完整精湛的分子烹饪技术。

Recently, Mandarin Oriental Wangfujing, Beijing has appointed Chow Ngan Ping as its new Executive Chef overseeing the culinary production and quality across its outlets of Café Zi, Mandarin Grill + Bar and MO Bar at this award-winning hotel located in the heart of Beijing.
Widely-travelled Chef Ping has worked for premium hotels and restaurants across the globe. He has been working for Mandarin Oriental Hotel Group for nearly fifteen years, his previous experiences include Mandarin Oriental, Hong Kong and Mandarin Oriental, Tokyo. Before joining Mandarin Oriental Wangfujing, Beijing, Chef Ping held the Executive Sous Chef position at Mandarin Oriental, Tokyo where he led the hotel’s one Michelin starred experimental Tapas Molecular Bar for more than seven years, since 2014, and had been creating unconventional surprises for diners from all over the world with his passion, dedication, and creativity.
Hong Kong-born Chef Ping honed his skills in Switzerland, and during his time travelling around Europe was impressed by the diversity of Western cuisine. His cooking style was also hugely influenced by his time at Mandarin Oriental, Hong Kong, since joining in 2005. The innovative cooking methods at the hotel vastly expanded his thinking and expertise, which directly resulted in him mastering molecular gastronomy techniques.
“It is a real honour to be Executive Chef of Mandarin Oriental Wangfujing, Beijing” says Chef Ping. “Teamwork, never giving up, and unique culinary offerings are probably the minimum requirements. In addition to sourcing the freshest and finest ingredients, I hope to inspire more creativity, cooking dishes that bring joy and delight to guests. I really hope that they can have magical experiences in the restaurants.”
The outgoing, vastly experienced chef is keen on outdoor sports and new adventures, which also represents his character, which is boundary-pushing and self-challenging. His easy-going personality, strong affinity and natural interaction with others will enable him to make menu recommendations to diners, and explain the philosophy behind his sophisticated food.
